This delightful dish combines the sweetness of fresh peaches, the savory richness of salmon, and the earthy goodness of fresh vegetables, all wrapped up in a tortilla for a meal that's both nutritious and delicious. Here’s what you’ll need to create this flavorful wrap:

- Blue Oyster Mushroom

- Sorrel Greens (shredded)

- Fresh Dill

- Egyptian Walking Onions (sliced and divided)

- Hummus

- Chard (shredded)

- Salmon (shredded)

- Summer Squash (zucchini and crooked neck, sliced into strips)

- Olive Oil

- Red Wine Vinegar

- Agave

- Tortilla Wraps

- Alicia Thee Chef’s Season All

- Prince Ruby’s Seafood Rub

- Fresh Pearson Peaches


Preparing the Veggies

1. Heat the Olive Oil: In a large pan, heat some olive oil and sprinkle in Alicia Thee Chef’s Season All.

2. Sauté: Add the sliced Egyptian Walking Onions, Blue Oyster Mushrooms, and strips of summer squash. Sauté them for 1-2 minutes until they're just beginning to soften.

Cooking the Salmon

1. Season the Salmon: In a bowl, blend Alicia Thee Chef’s Season All and Prince Ruby’s Seafood Rub. Cover the shredded salmon with this spice blend.

2. Sear the Salmon: Add the seasoned salmon to a hot oiled skillet. If you prefer to keep the skin on, start by searing it skin side down. Sear all sides until the salmon is nicely browned.

3. Finish the Salmon: Break up the salmon into smaller pieces in the skillet and add more sliced onions, fresh dill, a drizzle of agave, and a splash of red wine vinegar. Continue cooking until the salmon is no longer pink.

Making the Peach Sauce

1. Cook the Peaches: Cut fresh Pearson peaches into chunks and add them to a sauce pot along with some onions, red wine vinegar, and agave.

2. Blend: Cover and cook for about 2 minutes. Then transfer the mixture to a blender and blend until smooth. For an added kick, you can include some chili peppers.

Assembling the Wrap

1. Spread the Hummus: Take a tortilla wrap and spread a generous amount of hummus over it.

2. Add the Greens and Veggies: Layer the shredded chard and sorrel greens on top of the hummus, followed by the sautéed veggies and the cooked salmon.

3. Top with Peach Sauce: Drizzle the freshly blended peach sauce over the top.

4. Wrap and Serve: Roll up the tortilla into a wrap. Serve with a side of kale chips or sweet potato fries for a complete meal.
